  • 1.5 cups - All-purpose flour
  • 1/2 tsp - Baking powder
  • 1/4 tsp - Salt
  • 1/2 cup - Unsalted softened Butter
  • 3/4 cup - Sugar
  • 3 tbsp - Milk (as per need)
  • 1 tsp - Vanilla
  • 1 tbsp - Unsweetened cocoa powder
  • 1/4 cup - Semi-sweet chocolate (melted)
  • How to Make Eggless Pinwheel Cookies:

    1. Sift the all-purpose flour, baking powder and salt and keep aside.
    2. In a mixing bowl, beat the butter and sugar until they turn smooth and light.
    3. Add in the vanilla extract and milk, add the flour mixture slowly and knead into smooth dough.
    4. Remove half of the dough and keep aside.
    5. Now add the cocoa and melted chocolate to the other half of the dough and blend well.
    6. Roll both the dough into thick discs, cover with plastic cling film and keep in fridge for an hour.
    7. Roll out both dough as 12 inch squares between 2 pieces of parchment paper.
    8. Remove the top sheet of parchment paper from both plain vanilla and chocolate squares and flip the chocolate dough over the plain vanilla dough.
    9. Roll over the top with a rolling pin to make the dough adhere.
    10. Roll up the dough tightly into a big log.
    11. Trim the sides and carefully slice the log into 1/4 inch thick cookies.
    12. Preheat the oven to 350 degrees F.
    13. Transfer the pinwheel cookies to a baking sheet lined over a baking tray and bake for 10-12 minutes.
    14. Cool on wire rack and enjoy.
