  • 1 cup - Pumpkin puree
  • 1/2 cup - Butter (at room temperature)
  • 3/4 cup - Sugar
  • 1/4 cup - Milk
  • 1.5 cups - All-purpose flour
  • 1 cup - rolled oats
  • 1/2 tsp - Baking soda
  • 1 tsp - Baking powder
  • How to Make Eggless Pumpkin and Oats Muffins:

    1. Preheat the oven to 350 degrees F.
    2. Beat the sugar and butter until they turn soft and creamy.
    3. Meanwhile mix the flour, oats, baking soda and baking powder.
    4. Add pumpkin puree to the sugar-butter mixture and beat until the puree gets well mixed.
    5. Now add all the dry ingredients along with milk and mix well with a spatula (don't overmix).
    6. Pour the muffin batter over a muffin pan until it reaches 3/4th the level of the pan, arrange the muffin pan in the middle rack and bake for 20-25 minutes or until a skewer inserted comes out clean.
    7. Serve warm.
