Ingredients

  • 1/2 cup - Cooked quinoa
  • 1 cup - All-purpose flour
  • 1 cup - Rolled oats
  • 1/2 cup - Strawberries (chopped)
  • 1/2 tsp - Vanilla extract
  • 1 tsp - Baking powder
  • 1/4 cup - Sugar
  • 5 tbsp - Butter (at room temperature)
  • 1/2 cup - Buttermilk

How to Make Eggless Quinoa and Strawberry Cookies

  • In a small bowl, beat the sugar and butter until they turn soft, then add the vanilla extract and buttermilk and keep aside.
  • Meanwhile combine the cooked quinoa, all-purpose flour, rolled oats, chopped strawberries and baking powder together and mix well.
  • Add gently the wet ingredients to the dry ingredients and mix well.
  • Preheat the oven to 350 degrees F, line a baking sheet over a baking tray, make small balls from the mixture, arrange over the baking sheet and bake them in middle rack of the oven for 20-25 minutes.
  • Enjoy warm.
