  • 2 cups - All-purpose flour
  • 1/2 cup - Sugar
  • 1/4 cup - Butter
  • 1/4 cup - Oil (sunflower or canola)
  • 1 cup - Buttermilk
  • 1/4 cup - Walnuts (ground into fine powder)
  • 1 tsp - Baking powder
  • 1/2 tsp - Baking soda
  • 1 tsp - Vanilla extract
  • 2 tbsp - Chopped Walnuts
  • How to Make Eggless Walnut Muffins:

    1. Preheat the oven to 350 degrees F.
    2. Sieve the flour with baking soda and baking powder.
    3. Add the walnut powder, mix and keep aside.
    4. Beat the sugar, butter and oil until the sugar gets well dissolved.
    5. Add the buttermilk, and vanilla extract, and whisk everything well.
    6. Gradually add the dry ingredients to the wet ingredients, mix it well with a spatula
    7. The batter will be quite thick but don't over mix the batter, else your muffins will turn hard.
    8. Drop a large scoop of batter into the silicon muffin tray and bake for 20-25 minutes.
    9. Serve with a cup of tea.
