Ingredients

  • 1 - Eggplant (chopped)
  • 1/2 cup - Snake gourd (chopped)
  • 1/2 cup - Cooked toor dal
  • 1 - Onion (chopped)
  • 2 - Tomatoes (ripen and juicy)
  • 2 - Green chillies (slit opened)
  • 1 tsp - Sambar powder
  • 1 tsp - Lemon juice
  • 2 tsp - oil
  • 1/4 tsp - Mustard seeds
  • 1/4 tsp - Urad dal
  • 3 Dry red chillies
  • 1/4 tsp - Asafetida powder
  • Curry leaves
  • Chopped coriander leaves

How to Make Eggplant and Snake gourd Sambar

  • Heat oil, add mustard seeds and let splutter.
  • Add urad dal, dry red chillies and asafoetida powder and stir for a minute.
  • Add chopped onions, chopped tomatoes, slit opened green chillies, salt, saute everything for few minutes until the tomatoes turn mushy.
  • Add the chopped eggplant pieces, chopped snake gourd pieces and saute for few minutes until the vegetables get half cooked.
  • Add a cup of water and sambar powder to the vegetables and leave to boil.
  • Add the cooked toor dal to the vegetables, cook until the vegetables get well cooked.
  • Add chopped coriander leaves, curry leaves and lemon juice to the sambar and switch off the stove.
  • Serve with rice and papads.
