Ingredients

  • Eggplant -1 (medium) cut it into 2 inch slices
  • Tomato -1 (medium) cut it into long slices
  • Onion -1 (medium) cut it into long slices
  • Oil -1 tbsp
  • Mustard seeds -1/2 tsp
  • Cumin seeds-1/2 tsp
  • Chilli power -1/2 tsp
  • Turmeric power - a pinch
  • Cumin power-1/2 tsp
  • Salt
  • Coconut -1 tbsp (optional)

How to Make Eggplant Fry

  • Pour the oil in a frying pan. Add mustard seeds and cumin seeds.
  • After spluttering , add onion slices and fry them for a while.
  • Add tomato, eggplant slices, salt and turmeric powder and fry.
  • Add chilli powder and coconut (optional).
  • Finally add cumin powder, and cook till done. Serve hot.
