Ingredients

  • 1 - eggplant, finely chopped
  • 2 - onions, julienned
  • Pasta of your choice (penne preferable) - 100 gms
  • 1 cup - Tomato puree
  • 4 tbsp - Balsamic Vinegar
  • Dried Parsley
  • Oregano and Chilly flakes for seasoning
  • How to Make Eggplant Pasta:

    1. Cook pasta in a pan of slightly salted water.
    2. In a kadai, add oil and fry onions and eggplants. Add the tomato puree to the fried vegetables along with the balsamic vinegar till the mixture thickens and the vegetables get cooked well.
    3. Add salt and parsley to the mixture.
    4. Toss the cooked pasta in the sauce.
    5. Serve with grated parmesan, chilly flakes and oregano.
