Ingredients

  • 1 - eggplant, finely chopped
  • 2 - onions, julienned
  • Pasta of your choice (penne preferable) - 100 gms
  • 1 cup - Tomato puree
  • 4 tbsp - Balsamic Vinegar
  • Dried Parsley
  • Oregano and Chilly flakes for seasoning

How to Make Eggplant Pasta

  • Cook pasta in a pan of slightly salted water.
  • In a kadai, add oil and fry onions and eggplants. Add the tomato puree to the fried vegetables along with the balsamic vinegar till the mixture thickens and the vegetables get cooked well.
  • Add salt and parsley to the mixture.
  • Toss the cooked pasta in the sauce.
  • Serve with grated parmesan, chilly flakes and oregano.
