  • 1 long Eggplant (the one we get at Indian stores)
  • 2 cups frozen peas (add more it tastes better)
  • 1 cup Poha
  • 2 tbsp oil
  • Mustard seeds, Jeera, Coriander powder, Chilli powder, Turmeric for seasoning
  • Chopped Coriander leaves
  • Salt to taste
  • How to Make Eggplant Poha:

    1. Soak the poha in water for atleast an hour but don't make it soggy.
    2. Peel the eggplant and cut into pieces.
    3. Heat oil in a pressure cooker and add the jeera and mustard seeds.
    4. When the seeds splutter add the eggplant and peas along with the rest of the seasoning.
    5. Add a little water and steam the vegetables. It takes two whistles for the vegetables to cook.
    6. Open the cooker and add the soake
