  • 4 - large eggplants cut in small cubes
  • 4 - large Onions cut in 2 inch strips
  • 6 - Tomatoes cut in small slices
  • 2 - Lemons (extract juice)
  • 1 cup - fresh Coriander leaves
  • 4 - Green chillies
  • 1 tbsp - salt
  • How to Make Eggplant (Salad):

    1. Deep fry eggplant until dark brown.
    2. When they start to brown, stir gently.
    3. When done, set aside fried eggplants.
    4. Pat the fried eggplant with a paper towel to absorb excess oil.
    5. Add onions, tomatoes, chillies, coriander, lime juice and salt to the eggplant.
    6. Mix gently.
    7. Garnish with a little fresh coriander and chillies.
    8. Serve hot.
