Ingredients

  • 1/2 cup - Cooked yellow split moong dal
  • 1 - Eggplant (cubed)
  • 2 - Tomatoes(big and ripen, chopped)
  • 1 tsp - Sambar powder
  • 1/2 tsp - Coriander powder
  • Few Curry leaves
  • 1/2 tsp - Mustard Seeds
  • 1/4 tsp - Cumin seeds
  • 1/2 tsp - Urad Dal
  • 3 Dry Red Chillies
  • 1/4 tsp - Asafetida powder
  • Salt
  • Oil
  • 1 tsp - Lemon juice
  • How to Make Eggplant Tomato Sambhar:

    1. Heat 1 tsp of oil in a kadai.
    2. Add mustard seeds and let it splutter.
    3. Add urad dal, cumin seeds, dry red chillies, curry leaves and asafoetida powder and fry until it turns brown.
    4. Add the chopped tomatoes, cubed eggplants, salt and saute until the vegetables shrinks.
    5. Add the cooked moong dal, sambar powder, coriander powder, salt and sufficient water and bring to boil.
    6. Cook the sambar on simmer until the veggie is well cooked.
    7. Add lemon juice and switch off the stove.
    8. Serve sambar with papads and rice.
