Ingredients

  • 1/2 cup - Cooked yellow split moong dal
  • 1 - Eggplant (cubed)
  • 2 - Tomatoes(big and ripen, chopped)
  • 1 tsp - Sambar powder
  • 1/2 tsp - Coriander powder
  • Few curry leaves
  • 1/2 tsp - Mustard seeds
  • 1/4 tsp - Cumin seeds
  • 1/2 tsp - Urad dal
  • 3 Dry red chillies
  • 1/4 tsp - Asafetida powder
  • Salt
  • Oil
  • 1 tsp - Lemon juice

How to Make Eggplant Tomato Sambhar

  • Heat 1 tsp of oil in a kadai.
  • Add mustard seeds and let it splutter.
  • Add urad dal, cumin seeds, dry red chillies, curry leaves and asafoetida powder and fry until it turns brown.
  • Add the chopped tomatoes, cubed eggplants, salt and saute until the vegetables shrinks.
  • Add the cooked moong dal, sambar powder, coriander powder, salt and sufficient water and bring to boil.
  • Cook the sambar on simmer until the veggie is well cooked.
  • Add lemon juice and switch off the stove.
  • Serve sambar with papads and rice.
