How to Make Eggs And Brinjal Bake

  • Wash and dry the brinjals.
  • Cut into rounds of 1.25 cm (1/2 ") thickness.
  • Prong well with a fork.
  • Make a mixture of the chilli powder, turmeric powder and salt and smear onto both sides of each slice of brinjal.
  • Keep aside for 1 hour. Heat the oil in a frying pan and fry the brinjal slices on both sides.
  • Arrange these on a baking dish.
  • Sprinkle each slice with some garam masala and coriander leaves. Beat the eggs and add salt to taste.
  • Pour over the brinjals and bake in a moderate oven at 177 degrees C until the eggs are set.
  • Sprinkle with some more coriander leaves and serve immediately.
  • Makes 2 servings.
