How to Make Eggs in Spinach Curry

  • Hard boil the eggs, and cut them into halves and keep aside.
  • Clean and wash the spinach and cut it into fine pieces.
  • Add soda bi carb and cook in quarter cup of water until tender.
  • Let it cool and then blend it in a mixer.
  • Now heat oil in a pan and saute the onion, ginger, and chillies.
  • Then add turmeric powder and fry well.
  • Now add the spinach and salt. Cook for 8 - 10 minutes.
  • Add water to thin the consistency.
  • Now add the eggs and potatoes.
  • Simmer for some time and add salt to taste.
  • Finally add the condensed milk and remove from the stove.
  • Allow it to cool.
  • Serve with rice or chapathi.
