Ingredients

  • 6 - eggs
  • 3 bunches - Spinach
  • 1/4 tsp - Soda bi-carbonate
  • 3 - Potatoes
  • 2 tbsp - Ghee
  • 2 - Onions
  • 1 " - Ginger
  • 4 - Chillies, green
  • 1/2 tsp - Turmeric powder
  • 1 tbsp - Condensed Milk
  • Salt to taste.
  • How to Make Eggs in Spinach Curry:

    1. Hard boil the eggs, and cut them into halves and keep aside.
    2. Clean and wash the spinach and cut it into fine pieces.
    3. Add soda bi carb and cook in quarter cup of water until tender.
    4. Let it cool and then blend it in a mixer.
    5. Now heat oil in a pan and saute the onion, ginger, and chillies.
    6. Then add turmeric powder and fry well.
    7. Now add the spinach and salt. Cook for 8 - 10 minutes.
    8. Add water to thin the consistency.
    9. Now add the eggs and potatoes.
    10. Simmer for some time and add salt to taste.
    11. Finally add the condensed milk and remove from the stove.
    12. Allow it to cool.
    13. Serve with rice or chapathi.
