Ingredients

  • 7- eggs
  • Pepper as per taste
  • 2 tbsp- Butter
  • 1- onion, chopped finely
  • 1 tbsp- Lemon juice
  • Mix together:
  • 1 cup- chopped and boiled Carrots
  • 1- potato, boiled, peeled and diced
  • 1/4 cup- chopped Capsicum
  • 1/2 cup- boiled peas
  • 1/2 cup- French beans (chopped and boiled)
  • 1/4 cup- Coriander leaves (Chopped)
  • 1/4 cup- Celery (chopped)
  • 1/4 tsp- Turmeric powder
  • 1/2 tsp- Red Chilli powder
  • 2- tomatoes, chopped finely
  • Salt as per taste
  • How to Make Eggs on Vegetables:

    1. Heat oil. Fry onion till transparent.
    2. The add all the mixed vegetables and cook for 5 minutes.
    3. Mash it well. Add lemon juice. Cook for another 10-15 minutes.
    4. Spread the vegetables on a flat non-stick plate.
    5. Whisk the eggs, add salt and pepper, and spread over the vegetables.
    6. Cook the vegetable on low heat for 10 minutes.
    7. Cut into serving pieces and serve hot.
