Ingredients

  • 7- eggs
  • Pepper as per taste
  • 2 tbsp- butter
  • 1- onion, chopped finely
  • 1 tbsp- lemon juice
  • Mix together:
  • 1 cup- chopped and boiled carrots
  • 1- potato, boiled, peeled and diced
  • 1/4 cup- chopped capsicum
  • 1/2 cup- boiled peas
  • 1/2 cup- French beans (chopped and boiled)
  • 1/4 cup- coriander leaves (Chopped)
  • 1/4 cup- celery (chopped)
  • 1/4 tsp- turmeric powder
  • 1/2 tsp- red chilli powder
  • 2- tomatoes, chopped finely
  • Salt as per taste

How to Make Eggs on Vegetables

  • Heat oil. Fry onion till transparent.
  • The add all the mixed vegetables and cook for 5 minutes.
  • Mash it well. Add lemon juice. Cook for another 10-15 minutes.
  • Spread the vegetables on a flat non-stick plate.
  • Whisk the eggs, add salt and pepper, and spread over the vegetables.
  • Cook the vegetable on low heat for 10 minutes.
  • Cut into serving pieces and serve hot.
