  • 1/2 kg- Elephant Yam skinned and diced
  • 1 -large Onion
  • 1 inch- Ginger
  • 3-4 pods -garlic
  • Green chillies according to taste
  • 1 tsp - Dhania
  • 1 tsp -jeera powder
  • 1/2 tsp -red chilli
  • 1 tsp - Turmeric powder
  • little Garam Masala powder to sprinkle
  • 1 tbsp- Tamarind paste
  • salt
  • How to Make Elephant Yam Sabzi:

    1. Wash the yam and cook it with enough water, adding tamarind paste and salt.
    2. Be careful not to over cook it. It should be just about 3/4th cooked. Drain (reserve tamarind water) and set aside.
    3. Grind together ginger and garlic.
    4. Make a paste of green chillies and half onion -separately.
    5. In a heavy bottomed pan fry 1/2 of the sliced onion in a little oil till golden brown.
    6. Add ginger -garlic paste and fry till oil leaves the sides.
    7. Now add onion paste and cook for some more time stirring constantly.
    8. Put dhania and jeera powder and stir fry.
    9. When done add the yam into the mixture and stir fry making sure not to break the pieces.
    10. After about 3 minutes add tamarind water in which the yam was cooked.
    11. Adjust the salt according to your taste.
    12. Add chilli and turmeric powder now, cover and let it cook till all the water evaporates.
    13. Sprinkle the garam masala powder and stir lightly.
    14. Serve hot with phulkas or with plain rice.
