Ingredients

  • 1 cup - vegetables - (Yams, drumsticks, squash, yellow pumpkins, etc)
  • Squash - 1 medium sized
  • Turmeric - 1/2 tsp
  • Pepper powder - 1 tsp
  • Red Chilli Powder- 1 tsp
  • Jaggery- 1/2 tsp
  • Grated coconut- 4 tbsp (Keep separately)
  • Grated coconut- 3/4 cup
  • Salt to taste.
  • Roast and grind:
  • Grated coconut - 3/4 cup
  • Uncooked rice- 1 tsp
  • Cumin seeds- 1 tsp
  • Garnishing:
  • Coconut oil - 4 tsp
  • Curry leaves
  • Mustard seeds
  • Red Chilli - 1 whole
  • Grated coconut - 4 tbsp

How to Make Erisheri

  • Cut the vegetables of your choice into cubes.
  • Add some water, turmeric, pepper powder, red chilli powder, jaggery and salt, and cook.
  • Roast ingredients and grind them to a coarse consistency.
  • When the vegetables are cooked, add the powdered ingredients. Allow to cook.
  • Roast coconut which was kept separately until brown with oil.
  • Mix and garnish with mustard, curry leaves and red chilli.
