Ingredients

  • 500 g - Paneer (cottage cheese) cubes
  • Cornmeal (yellow Maize flour)
  • 2-3 tbsp - oil
  • Salt to taste
  • 1/4 tsp - freshly ground black pepper
  • 1/4 cup - finely chopped Spring onions
  • 1 - Clove garlic, minced
  • 1/4 tsp - cumin powder
  • 1/4 tsp - coriander powder
  • a pinch of Nutmeg powder
  • 1/4 cup -red Vinegar
  • 1/4 cup -vegetable stock or water
  • 1 tsp - Red Chilli powder
  • 2 tbsp - blanched slivered Almonds
  • 2 tbsp - green olives, washed, drained and sliced
  • A few sprigs of fresh coriander
  • How to Make Farmhouse paneer (cottage cheese):

    1. Roll the paneer pieces in cornmeal. Make sure to coat them completely.
    2. Fry the paneer pieces in hot oil, sprinkle salt and pepper on the pieces as they cook.
    3. When the paneer pieces are well browned, add onion, garlic, cumin, coriander powder and nutmeg.
    4. Add vinegar and stock/water.
    5. Cover and simmer for 5-10 minutes.
    6. Add chilli powder and simmer for a few more minutes.
    7. Add the almonds and olives.
    8. Season with salt and pepper.
    9. Garnish with coriander leaves. Serve hot.
