Ingredients

  • Rice - 1 cup
  • Carrot - 2 (small)
  • Oil - 2 tbsp
  • Mustard - 1 tsp
  • Urad dal - 2 tsp
  • Red chilli - 2
  • Cashewnuts - a few
  • Salt to taste

How to Make Festive Carrot Rice

  • Cook the rice and let it cool.
  • Grate the carrots.
  • Heat oil in a pan. Add the mustard seeds, urad dal, red chillies and cashews.
  • When the cashews are brown, add the grated carrots.
  • Add salt and fry until the raw smell leaves.
  • When the mixture cools, mix with the rice thoroughly.
  • Serve with papad or aloo curry.
