Ingredients

  • Rice - 1 cup
  • Carrot - 2 (small)
  • Oil - 2 tbsp
  • Mustard - 1 tsp
  • Urad Dal - 2 tsp
  • Red Chilli - 2
  • Cashewnuts - a few
  • Salt to taste
  • How to Make Festive Carrot Rice:

    1. Cook the rice and let it cool.
    2. Grate the carrots.
    3. Heat oil in a pan. Add the mustard seeds, urad dal, red chillies and cashews.
    4. When the cashews are brown, add the grated carrots.
    5. Add salt and fry until the raw smell leaves.
    6. When the mixture cools, mix with the rice thoroughly.
    7. Serve with papad or aloo curry.
