How to Make Fiery Ridge Gourd Chutney

  • Dry roast sesame seeds and dry coconut powder and grind them together.
  • Wash the ridge gourd thoroughly in hot running water.
  • Peel it and fry it in two tbsps of oil along with a little salt, dry red chillies and curry leaves.
  • Fry it till the peel gets tender or cooked.
  • Put the cooked peel, the above prepared powder, jaggery, tamarind, salt in mixer and grind to a fine paste.
  • Empty the contents into a container and add the seasoning. Tastes excellent with rice, chapatti dosa, stale jowar roti (bhakri) etc.
