Ingredients

  • 500 g - Potatoes
  • Salt and pepper to taste
  • 124 g - sardines
  • 1 tbsp - Parsley
  • 1/2 tsp - herb salt
  • 2 tbsp - oil
  • 2 tbsp - Butter
  • Seasoned flour
  • 1 cup - crisp bread crumbs
  • 1 - egg, beaten with 1 tbsp Milk
  • How to Make Fish Cakes with potatoes:

    1. Boil 500 ml water in a covered pan with 1/2 tsp salt and 1/2 tsp pepper
    2. Peel the potatoes and slice them very thinly
    3. Put them to boil in the covered pan
    4. Meanwhile open the tins and drain the sardines
    5. Chop the parsley
    6. Put the potatoes and fish through a sieve
    7. Stir in the parsley and herb salt
    8. Dip your hands into the seasoned flour, take up a handful of the potato-fish mixture, roll and flatten it into a patty shape
    9. Pass through the egg mixture and then the bread crumbs
    10. Fry on both sides until golden brown
    11. Grilled tomatoes, peas, pureed carrots or swedes would go well with these fish cakes as would tomato sauce
