Fish croquettes

Ingredients

250 gms white fish, boiled, flaked and mashed in a mortar

1 medium onion, finely chopped

2 medium potatoes, boiled, peeled and mashed

2 green chillies, finely chopped

1/2 tsp fresh ginger, chopped

1/2 tsp chopped coriander

1 egg, beaten

100 gms fine breadcrumbs, for coating

100 gms oil for frying

Salt to taste

Method

  1. In a bowl, mix together the fish, onion, potatoes, chillies, ginger, salt, ground black peppercorn and coriander.
  2. Grease your hands, take small pieces of the mixture and shape into croquettes.
  3. Brush each croquette with the beaten egg and then roll the croquette in the breadcrumbs to coat evenly.
  4. Heat the oil in a pan and shallow fry the croquette until golden brown in colour.
  5. Remove with a slotted spoon, drain on kitchen paper and serve hot with green chutney.
