Ingredients

  • 10 - large green chillies
  • 15 - large dry red chillies
  • 3 kg - fish (sardines, surmai, mackerels, suitable for frying)
  • 3 pods - garlic
  • 1 inch - ginger
  • 1 tsp - jeera/cumin seeds (ground)
  • Salt to taste
  • Oil for frying
  • Turmeric powder as required
  • 1 inch - turmeric/haldi (ground)
  • 3 cups - vinegar

How to Make Fish in Vinegar (Molee)

  • Cut the fish, remove the entrails and wash it until clean and ready to be cooked.
  • Apply turmeric powder and marinate for an hour.
  • Grind dry red chillies, turmeric powder, jeera with a little vinegar.
  • Slice green chillies, flakes of garlic and ginger and mix them to make a masala.
  • Fry the fish in a pan. Once done, remove and let it cool.
  • In a separate vessel, add vinegar, salt, the ground masala and the sliced masala and boil for 30 minutes.
  • Cool it and add the fried fish.
