  • 2 tbsp. vegetable oil
  • ½ tsp. crushed red pepper
  • 1 pound cod, halibut or snapper
  • 1 ½ tsp. salt
  • 2 tbsp. water
  • 2 medium potatoes, cooked and quartered
  • 1 cup thick Coconut Milk
  • ½ tsp. Turmeric
  • 1 Clove garlic, crushed
  • ½ tsp. grated Ginger
  • 1 tsp. green pepper, finely chopped
  • Juice of 2 limes

How to Make Fish with Coconut Milk

  • Heat oil and sauté onion until golden.
  • Add turmeric, garlic, ginger, green pepper and crushed red pepper.
  • Fry for 2 to 3 minutes.
  • Put in fish which has been cut into serving pieces, salt it and sprinkle on water.
  • Cook for about 5 minutes. Add potatoes and coconut milk.
  • Simmer until fish is tender, watching carefully.
  • Remove from heat and add lime juice. Serve hot.
