How to Make Five Spiced Mixed Vegetables

  • Peel the potatoes and pumpkin.
  • Cut them and the brinjal into 3 cm dice.
  • Heat oil in a thick deep pan.
  • Add aniseed, mustard, cumin and fenugreek.
  • When they splutter, add chilli and bay leaves.
  • Add the vegetables and rest of the ingredients.
  • Add about half a cup of water. Mix well.
  • Cook on a low flame till vegetables are done and the liquid is absorbed.
  • Serve.
