Ingredients

  • Mixed vegetables (brinjal, potato, yellow pumpkin) - 500 gm
  • Mustard oil - 2 tbsp
  • Aniseed - 1/2 tsp
  • Mustard Seeds - 1/2 tsp
  • Cumin seeds - 1/2 tsp
  • Fenugreek seeds - 1/2 tsp
  • Red Chilli - 1, broken into pieces
  • Bay Leaves - 2
  • Green chillies - 2, chopped
  • Turmeric powder - 1/2 tsp
  • Sugar - 1/2 tsp
  • Milk - 1 tbsp
  • Salt to taste
  • How to Make Five Spiced Mixed Vegetables:

    1. Peel the potatoes and pumpkin.
    2. Cut them and the brinjal into 3 cm dice.
    3. Heat oil in a thick deep pan.
    4. Add aniseed, mustard, cumin and fenugreek.
    5. When they splutter, add chilli and bay leaves.
    6. Add the vegetables and rest of the ingredients.
    7. Add about half a cup of water. Mix well.
    8. Cook on a low flame till vegetables are done and the liquid is absorbed.
    9. Serve.
