  • Potatoes - 3, chopped into big pieces.
  • Onion - 1, sliced.
  • green chillies - 2 or 3, slit.
  • Ginger - 1 inch piece, cut into juliennes.
  • Coconut milk - 1 cup.
  • Curry leaves- as per taste.
  • Coconut oil - 1 tsp.
  • Salt to taste.

How to Make Flavoursome Potato Stew

  • Combine the potatoes, green chillies, ginger, salt, onion in a heavy bottomed pan and cook till the potatoes are tender.
  • Now add the coconut milk and simmer for 2-3 mins.
  • Then add the curry leaves and coconut oil.
  • Remove from fire.
  • Serve hot with idlis or rice.
