  • raw Rice - 2 cup
  • black gram (urad) dal - 3 tbsp
  • tiny bread crust pieces - 2 cup
  • Fenugreek seeds - ½ tsp
  • grated Coconut - 1 cup
  • Jaggery - 3 tbsp
  • curds - ½ cup
  • cooking soda - ½ tsp
  • oil as required
  • salt to taste
  • How to Make Fluffy Bread Dosa:

    1. Soak rice, dal and fenugreek seeds together in water for two hours.
    2. Soak bread crumbs in just enough water for 15 minutes.
    3. Grind rice, dal and fenugreek to a thick, smooth paste.
    4. Add bread and coconut and grind till it becomes smooth again.
    5. Add jagery, curds and salt. Mix well.
    6. The consistency of this mixture should be like a thick pouring batter.
    7. Cover and leave to ferment over night.
    8. Add soda to the fermented batter and mix well.
    9. Heat a non stick dosa pan and brush with little oil or ghee.
    10. Pour 1.5 cup of batter on it and spread lightly to form a thick disk.
    11. Pour a tsp of oil or ghee all round it.
    12. Cover and cook till done.
    13. Do not turn over to cook the other side.
    14. The dosa will be fluffy and full of tiny holes, golden brown at the bottom and light brown on top. Use all the batter thus. Serve the doasa hot with a blob of butter or drizzled with ghee.
