  • raw rice - 2 cup
  • black gram (urad) dal - 3 tbsp
  • tiny bread crust pieces - 2 cup
  • fenugreek seeds - ½ tsp
  • grated coconut - 1 cup
  • jaggery - 3 tbsp
  • curds - ½ cup
  • cooking soda - ½ tsp
  • oil as required
  • salt to taste

How to Make Fluffy Bread Dosa

  • Soak rice, dal and fenugreek seeds together in water for two hours.
  • Soak bread crumbs in just enough water for 15 minutes.
  • Grind rice, dal and fenugreek to a thick, smooth paste.
  • Add bread and coconut and grind till it becomes smooth again.
  • Add jagery, curds and salt. Mix well.
  • The consistency of this mixture should be like a thick pouring batter.
  • Cover and leave to ferment over night.
  • Add soda to the fermented batter and mix well.
  • Heat a non stick dosa pan and brush with little oil or ghee.
  • Pour 1.5 cup of batter on it and spread lightly to form a thick disk.
  • Pour a tsp of oil or ghee all round it.
  • Cover and cook till done.
  • Do not turn over to cook the other side.
  • The dosa will be fluffy and full of tiny holes, golden brown at the bottom and light brown on top. Use all the batter thus. Serve the doasa hot with a blob of butter or drizzled with ghee.
