  • 2 or 3 - eggs
  • 3 - shitake Mushrooms
  • 1- Carrot
  • 1- green Onion
  • Salt and pepper
  • How to Make Folded Eggs:

    1. Soak shitake mushrooms in a bowl for 15 mins. Drain and set aside.
    2. Grate carrot.
    3. Chop green onion.
    4. In a bowl, mix the carrot, onion and mushrooms.
    5. Beat in the eggs.
    6. Add salt and pepper.
    7. Pour on to a pan on medium heat. As it cooks, keep folding and pressing.
    8. When you finish folding, it should look like a giant egg roll.
    9. Put it horizontally on a cutting board, and cut about 1/2 inch thick pieces and serve.
