Ingredients

  • 1 packet - silken Tofu
  • 1/2 lb - mung Bean sprouts
  • 1/2 lb - Mushrooms (button/ portabella/ straw)
  • 1 - sweet onion, chopped
  • 5 - green Onions green tops, fresh
  • 2 cups - shredded Cabbage
  • Oil
  • 8 cups - cooked Rice
  • For Teriyaki-based marinade sauce:
  • Soy sauce - 1 tbsp
  • Sugar - 1 tsp
  • Rice Vinegar - 1 tbsp
  • Toasted Sesame seed - 1 tsp
  • How to Make Freeze-Thaw Tofu Fried Rice:

    1. Freeze the tofu overnight.
    2. Thaw it completely before cooking.
    3. The freezing process changes the texture to a more chewy texture.
    4. Squeeze the water out.
    5. Cube into 1/2 inch blocks and toss into a zip lock bag with the marinade.
    6. Stir-fry the remaining ingredients and add the marinated tofu.
    7. Use the marinade to flavour the rest of the ingredients.
    8. Add the cooked rice and mix lightly.
    9. Serve in rice bowls with garnishes.
