Ingredients

  • 250 g - gooseberries (amla)
  • 1 - small, raw mango
  • 2 tbsp - mustard seeds
  • 1 tbsp - chilli powder
  • 1 tsp - turmeric powder
  • 1/2 tsp - asafetida powder
  • 1/2 tsp - cumin seeds
  • 1/2 tsp - saunf (fennelseeds)
  • 1/4 cup - salt

How to Make Fresh Amla Pickle

  • Slice gooseberries, remove segments and discard stones.
  • Add half the salt and keep aside.
  • Grate mango, add salt, turmeric and keep aside for 1 hour.
  • Drain out water from mango and save it for later use.
  • Crush mustard seeds coarsely.
  • Add all other masala and grind them with mustard seeds.
  • Add water drained from the mango and blend to make a paste.
  • Drain out water from gooseberries.
  • In a large bowl, mix masala paste and gooseberries.
  • Transfer to a wide glass jar and keep aside for 2 days.
  • Make sure to mix frequently in between, keeping lid closed.
  • It is now ready to serve.
