Ingredients

  • 2 cups - boiled Rice
  • 1.5 cups - boiled Prawns
  • 25 g - each of roasted peanuts, Cashew nuts and Walnuts
  • 2 - eggs, beaten
  • 4 - green onions, sliced
  • 1 - capsicum, shredded
  • 1 tbsp - soy sauce
  • 5 tbsp - oil
  • salt and pepper to taste
  • How to Make Fried Rice with Nuts:

    1. Deep fry walnuts and cashew nuts and chop coarsely.
    2. Heat 3 tbsp oil and fry onions till transparent.
    3. Add capsicum and prawns and fry for 5 minutes.
    4. Heat 2 tbsp oil again and fry rice for 5 minutes.
    5. Mix in eggs, soy sauce and salt and keep stirring till the eggs turn firm.
    6. Mix in the rest of the ingredients and serve hot.
