  • 6 eggs, large, separated
  • 1 cup - Sugar
  • 1 cup - Milk
  • 1 tbsp - cocoa powder
  • 1 tsp - vanilla essence
  • 2 cups - double cream, scant
  • 3 tsp - gelatin
  • 3 tbsp - water
  • How to Make Frozen Chocolate Souffle:

    1. Soak gelatin in water.
    2. Beat egg yolks with 6 Tbsp of sugar till pale and thick.
    3. Heat the milk to just below boiling point. Mix in the cocoa and vanilla essence.
    4. Pour over the yolk mixture.
    5. Cook over gentle heat, stirring, till the mixture becomes like a custard, thick enough to coat the spoon.
    6. Dissolve the gelatin over low heat and add to the custard. Leave to cool.
    7. Mix the remaining sugar with 4 Tbsp of water and prepare a soft ball syrup.
    8. Beat the egg whites stiffly and pour the hot syrup on them, whisking all the time.
    9. Continue beating till the meringue cools.
    10. Whip the cream till thick. Place the custard in basin of ice cold water.
    11. Stir till it begins to set, fold in the cream.
    12. Fold in the cooled meringue. Pour in a dish and freeze overnight.
    13. Transfer to the shelf in refrigerator for about 30 minutes to soften slightly before serving.
