Ingredients

  • 1 cup - chopped Dates
  • 1 cup - chopped dried Apricots
  • 1 cup - Coconut Milk
  • 1 cup - Orange juice
  • 2/3 cup - Brown sugar
  • 125 gm - Butter (melted)
  • 1.5 tsp - soda bicarbonate
  • 1/4 - cup boiling water
  • 2 eggs - lightly beaten
  • ¾ cup - whole meal self-rising flour
  • ¾ - cup whole meal plain flour
  • 1 tsp - mixed spice
  • How to Make Fruit and coconut loaf:

    1. Combine the first 4 ingredients, cover and stand overnight.
    2. Add sugar, butter, soda bicarbonate and water to the date mixture and combine well.
    3. Stir in eggs and sifted, dry ingredients.
    4. Spoon into a greased and lined loaf pan.
    5. Bake in an oven at 180 degrees C for 60 mins.
    6. Cool slightly before removing from the pan.
