Ingredients

  • 1 cup - chopped dates
  • 1 cup - chopped dried apricots
  • 1 cup - coconut milk
  • 1 cup - orange juice
  • 2/3 cup - brown sugar
  • 125 gm - butter (melted)
  • 1.5 tsp - soda bicarbonate
  • 1/4 - cup boiling water
  • 2 eggs - lightly beaten
  • ¾ cup - whole meal self-rising flour
  • ¾ - cup whole meal plain flour
  • 1 tsp - mixed spice

How to Make Fruit and coconut loaf

  • Combine the first 4 ingredients, cover and stand overnight.
  • Add sugar, butter, soda bicarbonate and water to the date mixture and combine well.
  • Stir in eggs and sifted, dry ingredients.
  • Spoon into a greased and lined loaf pan.
  • Bake in an oven at 180 degrees C for 60 mins.
  • Cool slightly before removing from the pan.
