Ingredients

  • 90 gm. Sultanas
  • 50 gm. currants
  • 50 gm. candied lemon and orange peel
  • 125 gm. softened butter
  • 100 gm. sugar
  • 3 eggs
  • 1 packet vanilla sugar
  • 250 gm. sifted flour
  • 1/2 pkt baking powder (5 gm.)
  • 5 tbsp. Milk

How to Make Fruit cake with Candied Lemon

  • Preheat the oven at 180degreeC.
  • Grease a bread tin with butter line with greased greaseproof paper.
  • Chop the candied fruit peel coarsely in the mill in short bursts or use the metal blade in the processor bowl.
  • Put into a bowl with the currants and sultanas and 1 tbsp - of flour.
  • Mix together and put aside.
  • Beat the butter and sugars in the processor for 20 seconds on speed 8 using the plastic blade.
  • Continue to beat and put in the eggs one at a time through the feeder tube, then the milk and finally the flour with the baking powder (using a tablespoon).
  • Mix in the fruit in short bursts at first, for 10 seconds on speed 6.
  • Put the mixture in the tin and bake for 1 hour 15 mins.
  • Turn out onto a cooking rack.
