Ingredients

  • 2 cups - basmati rice, cooked
  • 250 g - carrot, grated
  • 50 g - Peanuts
  • 3-4 - Red Chillies or as per taste
  • 25 g - Urad Dal
  • 2 tbsp - coconut, grated
  • 1 tsp - Mustard Seeds
  • 1/2 tsp - Jeera
  • Cashewnuts and Coriander leaves for garnishing
  • 1 tbsp - oil
  • salt to taste
  • How to Make Gaajar chawal:

    1. Cook the rice (each grain should be separate).
    2. Heat the oil and add the urad dal, peanuts, red chillies and grated coconut and wait for an aroma to emanate. Powder the ingredients.
    3. Heat oil again and temper with mustard seeds and jeera. Add the grated carrots and saute until the raw flavour goes.
    4. Add the mixture and salt to the rice and mix well.
    5. Garnish with fried cashewnuts and coriander leaves.
