Well-known as the dessert of the Bhind-Morena region of MP, India, the dry sweet dish of Gaja is made with jaggery, peanuts or sesame seeds, and is made and consumed in the winters.
To make Gajak, firstly grease a pastry tray with oil and keep it aside. Next, sesame seeds need to be roasted in a heavy pan until they turn pinkish and feel lighter. Remove them from the heat and keep them aside. Next, the jaggery should be heated over low heat; add cardamom and ghee and stir gently until the entire mixture becomes smooth.
You also need to add the sesame seeds and mix them gently.
This mixture now needs to be poured into a tray and allowed to cool until it becomes warm. While its warm is the best time to mark out the indentations for squares in the sizes as desired by you. Now, allow the sweet to cool completely and store the pieces in airtight containers.
