Ingredients

  • 200g - cucumber with yellow skin (curry variety)
  • Salt
  • 1/2 tbsp - oil
  • 4 green chilli
  • 1/2 tsp - jeera
  • 4 peeled garlic cloves
  • 1/4 tsp - mustard seeds
  • 1 tsp - tamarind paste

How to Make Garlic Cucumber Chutney

  • Peel cucumber, cut into half inch pieces, keep aside.
  • Prick the chillies with a needle.
  • Heat oil (1/4 tbsp), add cucumber pieces and fry for 3 min and remove.
  • In the same pan, add remaining oil, mustard seeds, jeera, garlic cloves.
  • Fry till seeds crackle, add green chilli, salt and fry for 2 mins.
  • Remove from fire and grind this with tamarind paste and half the quantity of fried cucumber pieces into a coarse paste.
  • Add the remaining cucumber pieces and run mixer for a second before removing.
  • Serve this chutney with hot rice (of course with a spoonful of desi ghee).
