  • 200g - Cucumber with yellow skin (curry variety)
  • Salt
  • 1/2 tbsp - oil
  • 4 Green chilli
  • 1/2 tsp - Jeera
  • 4 peeled Garlic Cloves
  • 1/4 tsp - Mustard Seeds
  • 1 tsp - Tamarind paste
  • How to Make Garlic Cucumber Chutney:

    1. Peel cucumber, cut into half inch pieces, keep aside.
    2. Prick the chillies with a needle.
    3. Heat oil (1/4 tbsp), add cucumber pieces and fry for 3 min and remove.
    4. In the same pan, add remaining oil, mustard seeds, jeera, garlic cloves.
    5. Fry till seeds crackle, add green chilli, salt and fry for 2 mins.
    6. Remove from fire and grind this with tamarind paste and half the quantity of fried cucumber pieces into a coarse paste.
    7. Add the remaining cucumber pieces and run mixer for a second before removing.
    8. Serve this chutney with hot rice (of course with a spoonful of desi ghee).
