Ingredients

  • 300 g - tender Gherkins
  • 3 - green chillies, chopped
  • 2 - onions, chopped
  • 1 tbsp - chopped Garlic
  • 1/4 tsp - Mustard Seeds
  • 1/2 tsp - Turmeric powder
  • 8 - Curry leaves
  • 1/2 cup - grated Coconut (optional)
  • 1 tbsp - oil
  • Salt to taste
  • How to Make Gherkins (Ivy Gourd) Foogath:

    1. Cut the gherkins into thin strips.
    2. Heat oil in a pan and add the mustard, garlic and curry leaves.
    3. When the mustard starts spluttering, add the chopped onion and green chillies and fry till the onions turn slightly brown.
    4. Add the gherkins, turmeric powder and salt and mix well.
    5. Mix in the grated coconut.
    6. Cover and cook for about 10 minutes till the gherkins are soft.
    7. Serve with rice and curry.
