How to Make Ginger-Brinjal Curry

  • Cut brinjals into 2 slits to form a cross and drop them immediately into salted cold water.
  • Now, without oil, fry ginger, coconut, peanuts, cloves and grind them with jaggery and little water.
  • Heat oil in a pan and add cut-onions, brinjals and let the ingredients be covered till they become tender.
  • Add grounded paste, chilli powder, salt, water, cilantro and simmer on low till the oil is released.
  • Serve hot with rice or chapatti.
