Ingredients

  • 1 beaten Egg
  • 125 gm - plain flour
  • 1.5 cup - castor Sugar
  • 1.5 tsp - bicarbonate of soda
  • 1.5 tsp - salt
  • 1.5 tsp - Cinnamon
  • 1 tsp - Ginger powder
  • 1.5 cup - Butter
  • 1.5 cup - chopped nuts or Walnuts
  • 1.5 cup - Coconut
  • 1 tbsp - golden syrup
  • 1.5 cup - butterMilk or sour Milk

How to Make Ginger Cake

  • Combine flour, sugar, bicarbonate of soda, salt, cinnamon and ginger.
  • Rub in butter using finger tips until it resembles fine breadcrumbs.
  • Remove 1.5 cup of the mixture and add nuts and coconut.
  • Reserve for topping.
  • Add egg to remainder of mixture with golden syrup and butter.
  • Blend and line into a 20 cm greased round dish.
  • Cook on medium for 3 to 4 mins.
