Ingredients

  • 1 beaten Egg
  • 125 gm - plain flour
  • 1.5 cup - castor Sugar
  • 1.5 tsp - bicarbonate of soda
  • 1.5 tsp - salt
  • 1.5 tsp - Cinnamon
  • 1 tsp - Ginger powder
  • 1.5 cup - Butter
  • 1.5 cup - chopped nuts or Walnuts
  • 1.5 cup - Coconut
  • 1 tbsp - golden syrup
  • 1.5 cup - butterMilk or sour Milk
  • How to Make Ginger Cake:

    1. Combine flour, sugar, bicarbonate of soda, salt, cinnamon and ginger.
    2. Rub in butter using finger tips until it resembles fine breadcrumbs.
    3. Remove 1.5 cup of the mixture and add nuts and coconut.
    4. Reserve for topping.
    5. Add egg to remainder of mixture with golden syrup and butter.
    6. Blend and line into a 20 cm greased round dish.
    7. Cook on medium for 3 to 4 mins.
