How to Make Glass Noodle Stir-fry (Jap Chae)

  • Soak glass noodles for 30 mins.
  • Soak shitake mushroom in water for 15 mins and cut off stem.
  • Cut mushroom into thin strips.
  • Cut beef into thin strips.
  • Mix all the ingredients for seasoning and marinate beef and mushroom in a same bowl.
  • Meanwhile, cut carrot and onion into thin strips.
  • In a boiling water, cook spinach for 2 mins.
  • Cool spinach in running water, and dry on paper towel.
  • Season with salt and sesame seed oil.
  • Whip egg. Add a little salt. Pour on griddle and fry.
  • Once done, cut into thin strips.
  • Heat oil in a deep pan and start cooking beef and mushrooms.
  • When beef is cooked, add carrot, onion, spinach and noodles.
  • Stir-fry until vegetables are cooked.
  • Add egg strips and mix.
  • Add a little bit of sesame seed oil and turn off the heat.
  • Pour into a bowl, garnish with sesame seeds and serve hot
