  • 6 ripe Bananas
  • 3/4 cup - Coconut Milk
  • 1/2 cup - Sugar
  • 1/2 cup - Brown sugar
  • a pinch of salt
  • How to Make Gluay Guan (Thai Banana Cake):

    1. Peel the bananas.
    2. Use a beater or food processor to blend the coconut milk and bananas to a smooth paste.
    3. Saute the smooth paste in a large non-stick pan over medium heat for about 10 mins, until the mixture is dry.
    4. Add both the sugars and salt, and continue to mix and cook until the mixture caramelizes.
    5. Spread on a baking sheet to a thickness of 1 inch and allow to cool.
    6. Cut into 1 inch pieces and serve.
