Ingredients

  • 1 cup - thick cream
  • 1/2 cup - butter
  • 250 g - goat cheese, cut into pieces
  • salt and freshly ground pepper to taste
  • 1/2 cup - toasted walnuts, coarsely chopped
  • 350-400 g - pasta of your choice, boiled and drained
  • Chopped chives, parsley or coriander leaves

How to Make Goat cheese pasta

  • Pour the cream into a pan and bring it to a boil.
  • Boil on low heat for several minutes, until the cream thickens and reduces to half its quantity.
  • Add butter, letting it melt slowly into the cream, keep stirring.
  • Keep warm over low heat.
  • Add the cheese to the cream, stirring until the cheese is partially melted.
  • Season with salt and pepper to taste, toss in the walnuts just before mixing the sauce with the pasta.
  • Garnish with chives, parsley or coriander leaves.
