Ingredients

  • ?kg - cauliflower
  • ?kg - carrots
  • 100 g - small whole lady fingers
  • 125 g - mango masala
  • 10 to 12 green chillies
  • 10 to 12 pieces ginger
  • 12 flakes garlic
  • ?tsp - turmeric powder
  • 2.5 cups - water
  • ?cup - sugar
  • 1 tsp - acetic acid
  • salt to taste

How to Make Gobi Gajjar Bheendi Achar (Vegetable Pickle)

  • Chop the cauliflower and carrots into small equal portions.
  • Leave the chillies and ladies fingers as whole.
  • The ginger should be cut lengthwise.
  • Peel the garlic flakes but do not shred them.
  • Take a big vessel.
  • Mix together all the vegetables with sufficient salt and turmeric powder.
  • Put in the mango masala. Mix well.
  • Heat the water and dissolve the sugar.
  • Let it cool till it is lukewarm.
  • Add this water to the mixed vegetables.
  • Put in a teaspoon of acetic acid. Mix well.
  • Keep this put for 3 hours then store in a glass container.
