Ingredients

  • ?kg - Cauliflower
  • ?kg - Carrots
  • 100 g - small whole lady fingers
  • 125 g - Mango masala
  • 10 to 12 Green chillies
  • 10 to 12 pieces Ginger
  • 12 flakes Garlic
  • ?tsp - Turmeric powder
  • 2.5 cups - water
  • ?cup - Sugar
  • 1 tsp - Acetic acid
  • salt to taste
  • How to Make Gobi Gajjar Bheendi Achar (Vegetable Pickle):

    1. Chop the cauliflower and carrots into small equal portions.
    2. Leave the chillies and ladies fingers as whole.
    3. The ginger should be cut lengthwise.
    4. Peel the garlic flakes but do not shred them.
    5. Take a big vessel.
    6. Mix together all the vegetables with sufficient salt and turmeric powder.
    7. Put in the mango masala. Mix well.
    8. Heat the water and dissolve the sugar.
    9. Let it cool till it is lukewarm.
    10. Add this water to the mixed vegetables.
    11. Put in a teaspoon of acetic acid. Mix well.
    12. Keep this put for 3 hours then store in a glass container.
