Ingredients

  • Brinjals - 1/2 kg
  • bread crumbs - 1/2 cup
  • grated cheese - 1/2 cup
  • chopped Coriander leaves - 3 tbsp
  • roasted Peanuts - 2 tbsp, chopped
  • chopped Onion - 3/4 cup
  • Garlic - 1 tbsp, chopped
  • peeled and chopped Tomatoes - 1/2 cup
  • green chilies 2 to 3, chopped
  • oil - 1 tbsp
  • oil to deep fry
  • pepper to taste
  • salt to taste

How to Make Gratinated Brinjals

  • Cut brinjals in halves, lengthwise.
  • Make cuts on the flesh, sprinkle with salt and set aside, cut side down wards.
  • After ½ hr, rinse and pat dry.
  • Scoop out the pulp and deep fry the shells in hot oil.
  • Drain on kitchen paper.
  • Heat 2 Tbsp of oil in a kadai.
  • Add onion, garlic and chilies. Fry till fragrant.
  • Add scooped brinjal pulp and cook till it is soft.
  • Add tomatoes and cook for 2-3 minutes.
  • Add salt, pepper, coriander leaves and peanuts.
  • Mix well and remove from fire.
  • Stuff the fried shells with the filling and arrange them on a microwave safe plate.
  • Combine bread crumbs with cheese and sprinkle on top.
  • Microwave on full power till the cheese melts, about 1-2 minutes.
  • Serve hot.
