How to Make Green Capsicum Pulao

  • Grind grated coconut with 1 cup lukewarm water and extract coconut milk up to 4 cups.
  • Cook the rice with coconut milk, 1 tbsp of oil and salt and keep aside.
  • Heat oil with 1 tsp of butter or ghee, add the whole spices and fry until brown.
  • Add chopped onion with ginger-garlic paste, stir until the raw smell goes.
  • Add green chillies, garam masala, curry leaves and cook for a while.
  • Add capsicum pieces and stir until tender but crunchy.
  • Add the already cooked coconut flavoured basmati rice to the spiced capsicum pieces, toss it gently and add salt if needed.
  • Garnish with chopped coriander leaves.
