Ingredients

  • ½ kg - grated sour green Mango
  • ½ kg - Sugar
  • ¼ cup - onion, finely chopped
  • 3 to 4 pieces - Cinnamon
  • 1.5 tsp - ginger, minced
  • 1.5 tsp - garlic, minced
  • 75 ml - Vinegar
  • 5 tsp - salt
  • 2 tsp - chili powder
  • 1 tsp - Cardamom pods

How to Make Green Mango Relish

  • Add a little water to mango and cook till soft.
  • Add sugar and salt and keep aside till the sugar is dissolved.
  • Tie all the ingredients from cardamom to onion in a piece of muslin and add to mango.
  • Add chili powder and cook till the mixture is quite thick.
  • Remove the spice bag and squeeze in all the juice.
  • Add vinegar and cook till the relish has the consistency of jam.
  • Pour in sterilized bottles, cool and seal.
  • Lasts for a couple of months and longer in the refrigerator.
