1 - onion (1 big size or 2 small size), cut into thin slices, separate each layer
1/2 tsp - red chilli powder
1/4 tsp - turmeric powder
1 tsp - coriander powder
1 - tomato (big size or 2 small size)), cut into thin slices lengthwise
1 - capsicum (1 big size or 2 small size), remove seeds and cut into thin slices lengthwise
1/2 tsp - salt (or to taste)
How to Make Green Pepper Stir Fry
Dilute red chilli powder, turmeric powder and coriander powder in 1 tbsp of water and keep aside (spice mix).
Heat oil in a pan. Add onion and fry, till it turns light pink in colour, on a medium heat.
Add the diluted spice mix and stir well on a low heat, for 1 minute, until the raw smell goes and water dries up.
Add tomato and fry, for 1 minute.
Add capsicum and gently stir, for 1 minute.
Add salt to taste and mix all the ingredients well. Cover with a tight lid and cook on a low heat for 10 - 12 minutes, until done or vegetables are well cooked or spices are well coated on the vegetables.
Do not add water for cooking. Switch off the heat.
Serve as a side dish with rotis and dal.
