Ingredients

  • 1 - big brinjal
  • 1 - chopped onion
  • 4-5 cloves - garlic, ground
  • 2 - green chillies, chopped fine
  • 1 - chopped tomato
  • 1/2 tsp - cumin seeds
  • 1 tsp - coriander powder
  • 1/2 tsp - turmeric powder
  • 1/2 tsp - red chilli powder
  • 1 tsp - Kashmiri mirch
  • 1/2 tsp - garam masala
  • 2-3 - cloves
  • 1-2 tbsp - vegetable oil
  • Small quantity of ginger, ground
  • Chopped coriander leaves
  • Salt to taste

How to Make Grilled Brinjal Bharta

  • Insert 2-3 garlic pieces and cloves into the brinjal (by making a small notch on the surface of brinjal).
  • Turn the gas on medium high and put the brinjal over the flames.
  • Grill it and keep aside.
  • Heat oil in a heavy pan and add cumin seeds, turmeric powder, and coriander powder. Stir it.
  • Add onions, ginger, garlic paste, and chopped tomatoes into the oil and stir.
  • Add salt and chilli powder and stir until the oil separates.
  • Peel off the skin of the grilled brinjal (remove the cloves and garlic) and cut it into small pieces.
  • Mix it very well, add Kashmiri mirch and green chillies, and stir.
  • Add a small quantity of vegetable oil if needed, cover it, and let it cook for some time.
  • Turn off the gas and add garam masala.
  • Garnish it with chopped coriander leaves before serving.
  • Serve it hot with chapati and dal.
