  • 1 - big Brinjal
  • 1 - chopped Onion
  • 4-5 Cloves - garlic, ground
  • 2 - green chillies, chopped fine
  • 1 - chopped Tomato
  • 1/2 tsp - Cumin seeds
  • 1 tsp - coriander powder
  • 1/2 tsp - Turmeric powder
  • 1/2 tsp - Red Chilli powder
  • 1 tsp - Kashmiri mirch
  • 1/2 tsp - Garam Masala
  • 2-3 - Cloves
  • 1-2 tbsp - vegetable oil
  • Small quantity of ginger, ground
  • Chopped Coriander leaves
  • Salt to taste
  • How to Make Grilled Brinjal Bharta:

    1. Insert 2-3 garlic pieces and cloves into the brinjal (by making a small notch on the surface of brinjal).
    2. Turn the gas on medium high and put the brinjal over the flames.
    3. Grill it and keep aside.
    4. Heat oil in a heavy pan and add cumin seeds, turmeric powder, and coriander powder. Stir it.
    5. Add onions, ginger, garlic paste, and chopped tomatoes into the oil and stir.
    6. Add salt and chilli powder and stir until the oil separates.
    7. Peel off the skin of the grilled brinjal (remove the cloves and garlic) and cut it into small pieces.
    8. Mix it very well, add Kashmiri mirch and green chillies, and stir.
    9. Add a small quantity of vegetable oil if needed, cover it, and let it cook for some time.
    10. Turn off the gas and add garam masala.
    11. Garnish it with chopped coriander leaves before serving.
    12. Serve it hot with chapati and dal.
