Ingredients

  • 500 g - fish fillet
  • 3 tbsp - Garlic Butter
  • 1/2 tsp - fresh Rosemary
  • 2 tbsp - fresh Parsley
  • 1/4 - Lemon juice
  • salt and pepper to taste
  • To prepare Garlic butter:
  • 9 Cloves - garlic, roasted, peeled and pureed
  • 175 g - salted butter, softened
  • pinch - black pepper
  • To prepare Mushroom sauce:
  • 3 tbsp - Butter
  • 1 medium onion, finely chopped
  • 150 ml - mushrooms, finely sliced1 1/2 tbsp - plain flour (maida)
  • 2 cups - vegetable or Chicken stock
  • 2 1/4 tbsp - Lemon juice
  • 3 Egg yolks
  • 2 tbsp - fresh chopped chives

How to Make Grilled Garlic Butter Fish

  • To prepare garlic butter:
  • Combine the butter and the garlic, mix well.
  • Shape into a roll, wrap in cling film and freeze.
  • To prepare mushroom sauce:
  • Heat the butter in a pan.
  • Add onions and mushrooms, stir and cook until onion is soft.
  • Add the flour, cook stirring for one min.
  • Remove from heat and gradually add the stock, stirring continuously.
  • Place the pan back on the fire.
  • Stir in the egg yolks, chives, lemon juice and cook until mixture boils and thickens.
  • Melt the butter in a pan, do not allow it to brown.
  • Stir in the rosemary and parsley, then season with lemon juice, salt and pepper. Remove from fire.
  • Cover the fish with the flavoured butter and grill till done.
  • Serve with mushroom sauce.
