Ingredients

  • 400 g - Chicken breast
  • 40 ml - oil
  • salt and pepper to taste
  • 2.5 tsp - chopped fresh Thyme + extra for sauce
  • 1.5 tsp - Oregano + extra for sauce
  • 130 g - potatoes, peeled and boiled
  • 50 g - Butter
  • 20 ml - Cream
  • 100 g - onions, chopped
  • 30 g - garlic, chopped
  • 25 g - celery, chopped
  • 130 ml - vegetable stock
  • 40 ml - red wine
  • 2.5 tbsp. - flour, dissolved in a little water
  • How to Make Grilled herbed chicken:

    1. Marinate chicken in 20 ml. oil, salt, pepper and thyme for 20 mins.
    2. Grill chicken until done.
    3. Sprinkle with oregano and set aside.
    4. Mash potatoes with butter, cream and some seasoning and cook until potatoes are fluffy. Set aside.
    5. To make the sauce:
    6. Heat remaining oil in a pan and saute onion, garlic and celery.
    7. Deglaze pan with stock and red wine. Add salt, pepper, thyme and oregano.
    8. Add flour paste and cook until thick.
    9. Serve chicken and potatoes drizzled over with the sauce.
