Ingredients

  • 400 g - Chicken breast
  • 40 ml - oil
  • salt and pepper to taste
  • 2.5 tsp - chopped fresh Thyme + extra for sauce
  • 1.5 tsp - Oregano + extra for sauce
  • 130 g - potatoes, peeled and boiled
  • 50 g - Butter
  • 20 ml - Cream
  • 100 g - onions, chopped
  • 30 g - garlic, chopped
  • 25 g - celery, chopped
  • 130 ml - vegetable stock
  • 40 ml - red wine
  • 2.5 tbsp. - flour, dissolved in a little water

How to Make Grilled herbed chicken

  • Marinate chicken in 20 ml. oil, salt, pepper and thyme for 20 mins.
  • Grill chicken until done.
  • Sprinkle with oregano and set aside.
  • Mash potatoes with butter, cream and some seasoning and cook until potatoes are fluffy. Set aside.
  • To make the sauce:
  • Heat remaining oil in a pan and saute onion, garlic and celery.
  • Deglaze pan with stock and red wine. Add salt, pepper, thyme and oregano.
  • Add flour paste and cook until thick.
  • Serve chicken and potatoes drizzled over with the sauce.
