  • 1 pound - fresh red snapper
  • 3 - Egg whites
  • 2 tbsp - green onions, chopped
  • 1 tbsp - white Worcestershire sauce
  • 1 tbsp - Thai fish sauce
  • 1/2 cup - Mango ketchup
  • 1/2 pound - Spinach
  • 1/2 cup - bread crumbs
  • 1 tsp - dill, chopped
  • 1 loaf - French bread
  • How to Make Grilled Red Snapper Burger with Mango Ketchup:

    1. Chop the red snapper by hand or with a steel blade in a food processor.
    2. Place the snapper into a large stainless steel bowl.
    3. Add the egg white, Worcestershire sauce, fish sauce, green onion, and dill.
    4. Mix all together properly.
    5. Add sufficient bread crumbs to this mixture to bind it together.
    6. Form into 4 burger shapes, 1/2-inch thick, and let it chill for about 1/2 hour in the refrigerator.
    7. Heat a grill or broiler until it is very hot.
    8. Meanwhile, clean and dry the spinach.
    9. Sprinkle a little olive oil over the burgers just before grilling.
    10. Grill the burger over high heat for about 1.5 minutes, but be careful not to overcook the fish.
    11. Serve the burger immediately on French bread with the spinach leaves and dress it with mango ketchup.
